Potato, Kale and Sausage Soup
I don't really makes soups that often, mostly because I'm not very good at it! For some reason they always turn out boring. So I only have a few go-to soups that I actually really like and this is one of them.
A friend made this once for a bunch of us one summer over at their house, and I snapped a picture of the recipe in the cook book they used so I don't have a link! I don't even know what book it was from!
1/2 lb sausage- half sweet Italian, half spicy italian
1 1/2 c chopped onion
1 Tbs Veg oil
4-5 small red potatoes , scrubbed and quartered ( unpeeled)
4-6 cups chicken broth
1-3 cups kale , ribs removed, leaves thinly sliced
1 cup milk
2 Tbs cornstarch- dissolved in 1/4 water
salt and peper to taste
1. Fry sausage until brown and crumbly , set aside.
2. In a medium soup kettle, saute the onion in the vegetable oil until soft.
3.Add the potatoes and the broth and bring to a boil.
4. Add the Kale .
5. Stir in the milk.
6. bring just to a boil. Stir in the cornstarch mixed with water. If you want a soup with more body, use an additional tablespoon of cornstarch.
7.Add salt and generous grind of pepper. Taste and adjust.
